Dehydrators especially ones from Excalibur have increased in popularity in recent years with the chef community thanks to the many possibilities it opens up. Excalibur is the only dehydrator that has Parllexx® Horizontal-Airflow Drying System. The fan and the adjustable thermostat create excellent airflow, each tray receiving its own “jet stream” of forced air. Most other dehydrator radiate heat; they don’t direct it.
So what can you dehydrated?
Just about anything. Fruits, most vegetables, meat, fish, make your own fruit roll-ups. Make vegetable powders. Dry herbs and spices. Make your own soup mix and salad dressings. Dehydrate grains and dairy products. Make all types of crackers.
How does the dehydration process work?
The most critical aspects of the process are (1) the difference between air temperature and food temperature and how the evaporation process keeps food temperature cooler than air temperature (2) the working of the thermostat and how it causes the air temperature to fluctuate up and down (3) understanding at that the enzymes are most susceptible to destruction by heat in the wet state. After food is dehydrated the enzymes can withstand much higher temperatures.
Making Yogurt in a dehydrator
To make Yogurt in a dehydrator simply:
- 1. Pour milk into saucepan, heat over medium until temperature reaches 185°F-195°F.
- 2. Whisk in yogurt with active cultures. Make sure yogurt is mixed in well with milk.
- 3. Transfer mixture into glass jars, and close with lids.
- 4. Remove all trays from dehydrator and place jars inside.
- 5. Dehydrate for 8 to 10 hours. Do not stir or check yogurt during this time.
- 6. Once dehydrating is done, place in fridge. Yogurt will thicken as it cools.

Adjustable Thermostat 95oF to 155oF. Temperature range is low enough to preserve active enzymes in fruits and vegetables. Temperature range is also high enough to meet safety standards for dehydrating meat for jerky.
